As a Microsoft forum moderator, I don’t have access to your organization’s environment, and my macOS testing capabilities are limited. However, I’ll do my best to assist you based on the available documentation and resources.
To help narrow this down, may I ask whether you’ve already tried stopping the sync and re‑syncing the OneDrive folder to see if the folder name updates?
You can also try unlinking and re‑linking OneDrive accounts on Mac, though I would not recommend doing this right now because Microsoft 365 services are currently having accessibility issues.

In the meantime, as a workaround, you can try the method below. I tested it on my end and can confirm it works:
Click the Finder icon, in the search bar, type: ~/Library/CloudStorage. Then open the CloudStorage folder. This is where macOS stores the OneDrive locations on your device.
Right‑click one of the OneDrive folders and select "Make Alias". This will create an alias (shortcut) that you can rename freely.
Drag the alias folder into the Finder sidebar. The alias provides the same access point as the macOS‑generated OneDrive folder based on my testing.
Repeat the same steps to the other organization OneDrive folder.
