Per your description, it seems that you also want to hide the name of people under “Click a person to see what they’re working on” section, and you don’t want the others see whom you frequently contacted.
If so, we have also searched a lot and we cannot find a setting to hide the name of people under this option.
Given this situation, we understand that you want to find such settings. On the one hand, as we mentioned above, you can go to Delve UserVoice to provide your feedback. Microsoft will keep monitoring customers feedback there, some features would be added to the products and services based on customers feedback in the future, and your good ideas will be very helpful for the dedicated engineers in Microsoft to improve the services.
On the other hand, we found that if you go to Delve Settings > Feature settings > turn off Documents feature, in this situation, if you turn off it, others will still be able to find your documents in Office 365 if they have access to them. They just won’t show up in Delve or in the Discover view in OneDrive for Business.
At the same time, it will turn off Get back to your recent documents and email attachments, Click a person to see what they’re working on, Discover documents from people around you features at the same time, as shown below:
