I currently have a Windows 10 enterprise eval going that says it will expire in 30 days. I'll be on vacation (with that workstation at home) when it expires. What happens to Windows 10 evals when they expire? Do they just nag you? Do they stop booting? Can I use the "slmgr /rearm" command to give me a little more time?

For the first 2 weeks after the expiration date it will nag you, on the 15th day it will refuse to boot. If it refuses to boot rearm will be of no use.

I am not 100% certain, but I am under the impression that Windows will start rebooting every 2 hours. Regarding "slmgr /rearm", as far as I know Windows 10 cannot be rearmed due to it being tied in to your Microsoft Account. I would imagine that doing so would be a circumventing the product activation, which isn't legal.
If I were you, I would consider downgrading Windows 10 for the time being until you can legally license it. To do this, head on over to Settings > Update & Security and select the Recovery tab. The option to go back to the previous version of Windows should be there. This would obviously not be an option if you did a clean install of Windows 10.

When the 90 day evaluation period has concluded, you'll no longer be able to log on to Windows 10. You cannot reset it for additional time. It is therefore prudent to purchase and install a genuine retail edition of Windows 10 before you embark on a vacation.

The Windows Evaluation is used to test your applications, hardware, and deployment strategies before doing a full-scale deployment. It is not recommended for personal usage.

I am actually using it for testing. It's part of a home lab environment with a domain controller, exchange 2013 server, and web server.

Just wanted to come back and add my findings on this.
The 'nagging' that ZigZag3143x is referring to is actually a reboot every hour. (one hell of a nag)

And 30 days after the nagging it will refuse to boot. It will error out and say a windows component has expired unless you set the computer clock back
