Hi,
Try this:
1. Open Task Manager (Right-click task bar --> Task Manager)
2. Click on details
3. Find the process called "explorer.exe" and end it.
4. In the top left corner, click File --> Run new task
5. Write "explorer.exe" and check "Create this task with administrative privileges" --> Click OK
6. Change to your default browser again
7. Restart your computer.

Are you on a enterprise network or personal?
i.e. is there a GPO or startup scripts that are changing the settings each time you login?
I could not remember the exact registry location off the top of my head but a quick search on it found-
But it sounds weird to me that it would reset unless their is a GPO or Script, if their is not I would run SFC /SCANNOW from a admin cmd prompt just to check out sys files.

Hi,
Is it a domain joined device or local device?
If it is a domain joined device, please check if the issue occur on other domain joined computer.
How did you configure the default browser?
Please change the default browser through Settings\Apps\Default apps\web browser.
If the issue persists on local device, please go to registry path: HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\FileExts\htm, right click UserChoice and audit the registry changes with principle as everyone.
How to configure auditing on files, folders, and registry keys
Then sleep your computer and wake it up to check the logs in Event Viewer\Windows logs\security to check the details. Or export the event viewer log and upload it to OneDrive, then paste the link here for analyzing.

Hi
My PC is Azure AD joined (not registered) and there is no settings for default browser.
My PC is joined months ago and I know for sure that there hasn't been any modifications in any settings whatsoever.
I believe that this problem started at the same time that I got below update.
https://support.microsoft.com/en-us/help/4462919/windows-10-update-kb4462919
I also got Adobe Flash Player update at the same day.

Hi,
We have not heard any information about this update will bring default browser changes.
We could try to uninstall this update package from Control Panel\Program and Feature\View installed update to uninstall this update package. Then try to check if the issue persists again.
Or we could update system to the latest version 17134.376 with KB4462933 and check if the issue occur.
Please feedback the action result to us if the issue was resolved by uninstall this update. Thank you in advanced.
