After my OSD is complete I have a left over directory "C:\Users\ADMINI~1" which contain no file and a few folders. Why is this being left over?

i believe it is caused by the Copy logs process not fully cleaning up.
This is probably true, but there is no "copy logs process" by default. This must be some custom step developed by your company that copies data to a wrong folder.
By default the OSD logs are in c:\windows\ccm\logs which is where they should be, you really shouldn't copy those logs anywhere else. If you do have to create custom logs in a different place, the best folder would probably be some subfolder in c:\programdata

Thoughts anyone? My "Administrator" account folder is there "C:\Users\Administrator" and all the other profiles.. as they should be I just have this basically empty "ADMINI~1" folder left over. i believe it is caused by the Copy logs process not fully cleaning up.

It's probably left over from your image. Why do you have any user accounts or user account folders in your image? Your image should be completely clean.
