Where in registry can one find list of directories the files within file history is enabled for?
That one in Settings app > Security area > Backup sub-area is not suitable for double-check if all desired directories are on file history, one can't see whole list at one shot, one can't sort it, one can export it to plain-text.

the list of included and excluded folders is in the file
%LOCALAPPDATA%\Microsoft\Windows\FileHistory\Configuration\Config1.xml

File History configuration is stored in xml files in %LocalAppData%\Microsoft\Windows\FileHistory\Configuration.
It's referenced in registry key
HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Services\fhsvc\Parameters\Configs with value name = path to configuration folder, and value data = REG_DWORD:1.

HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Services\fhsvc\Parameters\Configs, path value not existing for Windows 10 here. All latest updates were applied.

What does not exist on Windows here is the path in file system pointed to by registry value communicated kindly in postings above.
Key in registry reads:
C:\Users\Ania\AppData\Local\Microsoft\Windows\FileHistory\Configuration\Config
On disks only following exist:
C:\Users\Ania\AppData\Local\Microsoft\Windows\FileHistory\Configuration\Config1
C:\Users\Ania\AppData\Local\Microsoft\Windows\FileHistory\Configuration\Config2
Few more files named to Catalog* scheme.
