Hey
I have had 2 users have an issue where Outlook stops responding.
It seems to happen when clicking an email with an attachment (any type).
Any idea whats going on?

I would first suggest you collect the event logs to troubleshoot the problem:
Press Win + R, type "eventvwr" in the Run box, press Enter.
In the Event Viewer, expand Windows Logs -> Application, check if there is any error about Office 2016.
Also, try to clean out the Temporary Internet Files folder and see if that will make a difference:
%LOCALAPPDATA%\Microsoft\Windows\Temporary Internet Files\Content.Outlook
When Outlook loads an attached file, it first saves it to a location on disk. It is quite normal for this directory to contain many files as Outlook does not always clear out the temporary copies of email attachments by itself, and this usually will cause some unexpected issues.
