How/where can I see real time smtp logs on Exchange 2010?

SMTP logging is diabled by default. You can read about it and hot to enable it at these links.

Thankyou Brian.
That was exactly what i was looking for.
Set-ReceiveConnector "My Receive Connector Name" -ProtocolLoggingLevel Verbose
Set-SendConnector "My Send Connector Name" -ProtocolLoggingLevel Verbose
And could see the logs on
C:\Program Files\Microsoft\Exchange Server\V14\TransportRoles\Logs\ProtocolLog

Wait, what about those of us who use Client Access Arrays? The services are all clustered. Does one have to examine all the members of the array that use the Hub Transport role?

You'll need to examine the logs of all of the hub transport servers that could potentially be receiving the emails you want to check the log entries for.
Doesn't really matter if you're clustered or not. For receive connectors you could be implementing load balancing / fault tolerance in MX without doing any clustering at all.
