For the Quick Launch, go to Site Actions > Site Settings > Navigation. On this page you should be able to change the order in which the links appear.
For the list views, there isn't a way in the UI for you to change the order of the views.

Hi NicoDijkhuizen,
For re-ordering lists on quick launch follow Chris' suggestion.
For List view re-ordering :
List Views are ordered as per they are created in ascending order. So you may recreate your list views the way you want the ordering. Other than that the Default view will appear on top.
Hope that helps...

Thanks Guys for the answers.
In SP2007 views are shown alphabeticaly, which seems natural and makes it possible to have it your own way, by using prefixes.
So in 2010 this is not the case and there is no way to change the order other than recreating the views! Doesn't sound very efficient.
