Simplest way is to open the Folder in Explorer view and there you can select all files and Windows explorer will show the total number of files.
Another way you can use is to modify the view of the doucment library and use Group By option and select a column wihch has common value for all documents and it will show count of documents against each group.

If Bhavik's answer does not work for you, then you will need to tell us more. How do you want to do the count? In code with C#? In PowerShell?
If you are looking for a no-code solution, just add the "Item Child Count" column to your view. For folders, this will display the number of documents in each folder.
