Hi,
It is not available to unpin Microsoft Edge only, we need to customize the taskbar on a test machine which we could unpin Microsoft Edge, then export the layout as a .xml file and deploy it through group policy. So it would be a little complex than you think.
We could refer to Windows 10 Start Layout Customization for taskbar layout customize which it has same steps with start layout customize.
