is there a way to convert the COA barcode to a product key? I bought a new PC with the microsoft CD and it has the COA barcode but not the key printed on the packaging

The barcode is a product number not the key looking online.
What version of Windows are you running? Windows 10 mostly uses digital licensing online so a key is not necessarily needed.
There is software online that can display the keys in use, such as NirSofts ProduKey

The Barcode isn't the Product Key, this is merely a part number.
If you want to inventories your clients then you shouldn't be using the COA sticker anyhow - you should be using what the machine is using, which will be either the Volume License Key, or the OEM_SLP Key (or possibly the COA Key).
