Hi,
I am looking for File > New > Website, but it is not an option in the menus, even though I have got the correct extensions installed.
I have tried on Visual Studio 2017 and Visual Studio 2019 - both community versions.
I have shown screenshots showing my File > New menu, and the extensions I have got installed.
Please can someone advise how to I can get the File>New>Website option?

Welcome to the MSDN forum.
The Web Site templates have been moved to a sub node under Web under the File, New, Project menu, please check this similar issue and we can go to New Project-Installed-Visual C#-Web-Previous Versions to create it:

While you can find it under "Previous Versions" in 2017, there is no such option (that I can find) in 2019. (Really miss the pre-2019 new project dialogs!)
