Having a strange error where the Server Manger shows "unknown" for all the local server properties, all other functions appear to work fine... any ideas how to fix this?

Well, I fixed the problem. I noticed that while it seemed everything said "unknown", you will notice, that the networking part where the IPs are is blank...and I have been having issues with VMware's NIC on this server as this is a virtual server. The VMware administrator uninstalled the VMware tools from this server and now the Server Manager is working correctly...

Well...that is what it looks like while server manager always looks like while populates the information which takes a minute. How long have you let it sit there? What are the available resources on the server like?

It's been like that for a couple days, tried rebooting, logging in with a different user account, etc. Plenty of resources available. If I click on "unknown" it even brings up the appropriate property settings...

That's pretty odd...have you checked the Windows Event Logs? That's going to be your next step...System/Application logs and then if you expand applications there are also a series of ServerManager specific logs...I'd start at the System logs first though.
