Hello,
I've coming from a VMware background and have built a couple of servers in Azure. We are about to install some new software onto a server, but like in the VMware days I would normally take a snapshot before in case something goes wrong I can roll back.
How do I do this in Azure on this VM?
Thanks

Refer the below article to take a snapshot of an Azure VM disks:
Back up Azure unmanaged VM disks with incremental snapshots
You can also use the Azure Backup to backup of an Azure VM, but the rollback feature is not supported with the Azure backup currently. You have to create a new VM from the available restore point.
For more information refer: /en-us/azure/backup/quick-backup-vm-portal
Very soon we are planning to support an option called “Original Location Restore” (OLR). With this we will be able to restore the VM in place of existing VM. This is kind of moving back the VM in time and retaining almost all the configuration. With this you do not need to delete the original VM.
