Hi Thien Lan,
Based on my search, Microsoft Edge works with these Group Policy settings (Computer Configuration\Administrative Templates\Windows Components\Microsoft Edge\ to help you manage your company's web browser configurations. But no policy disable Edge Proxy setting directly.
Based on my test, Microsoft Edge and Internet Explorer uses the same Proxy. When you click the Proxy setup option, you will open the Proxy in Settings.
If you have set it with GPO in IE setting, it will do the same. User could not change the proxy.
Hope it will be helpful to you

Have you got and added the Administrative Templates (.admx) for Windows 10 ?
Edge is a separate browser and does not use IE settings, it will need its own settings.

Hi Thien Lan,
Applocker is the recommended way
If you want to use AppLocker group policy, Microsoft Edge is belong to Packaged app. Please use this path to deny it:
Computer Configuration\Windows Settings\Security Settings\Application Control policies\AppLocker\Packaged app Rules
