Yesterday we renamed our active directory from network.ourdomain.net to ourdomain.net, and I'm trying to set up the email system to only have [email protected] instead of [email protected]. When I go into email address policies to change it, it won't allow me to change anything. I've added ourdomain.net to the Accepted Domains and set it as default, but still no luck.

Base on my knowledge, it is not supported to change domain name once exchange have been installed.
If you want to rename domain name, the workaround is to create a new AD forest, install Exchange into the new forest, and migrate all the objects.
