Copilot may have been disabled separately inside each app. Also, classic Outlook currently has a known issue where Copilot buttons can disappear after certain updates.
Besides the solutions provided by the Q&A Assist, here are some suggestions you can try:
In Word, Excel, and PowerPoint, open File > Options > Copilot. Make sure Enable Copilot is selected, choose OK, then restart the app. This setting is separate for each program, so check all three.
Open the Windows Get Help app, search for Copilot License Troubleshooter, and follow the prompts. It can detect subscription or license-recognition problems that are not obvious in the Office apps.
If the missing icon is in classic Outlook for Windows, try new Outlook or https://outlook.live.com/ for now. The Outlook team is investigating a known issue where Copilot entry points disappear in recent classic Outlook builds. Recreating the Outlook profile generally does not resolve this particular issue.
If Copilot remains missing everywhere after these checks, contact Microsoft Support from the Get Help app so they can verify the subscription entitlement on the account.
