Why am I being shown that I have 1 outdated driver? Microsoft UEFI- Compliant System, when the version number is 10.0.26100.8972 (Released Jun 20, 2006) Is it just a misprint on the date?

You can safely ignore that notification, there is nothing wrong with that driver.
Norton make good security software, however, it is not recommended to use any 3rd party software to update your drivers, they may install incompatible drivers and may result in BSOD's, it is always best to let Windows update your drivers or go to the support page for your PC on the manufacturers website to install any driver updates that may be available.

CCleaner also sends the same message!
That is not a mis-print, Microsoft dates some system drivers to June, 2006 to prevent Windows from overwriting custom PC manufacturer drivers.
Where are you seeing it indicated that the Microsoft UEFI- Compliant System driver is out of date, is that in some 3rd party driver updating utility, please provide a screenshot of where you see that notification.
