Briefly, it is impossible to set a font in emails because the Outlook application is creating broken HTML.

Thank you for taking the time to share these additional details.
After reviewing both cases and performing testing in my own environment, I was able to observe similar behavior. In Outlook for Mac version 16.110.3, the HTML rendering appears to be consistent with what you described.
As this is a user-to-user support forum, I am not part of the Microsoft Support team and do not have the ability to directly transfer this information to the appropriate team for further handling.
With that in mind, I highly recommend reaching out to your organization's IT administrator and asking them to open a support ticket through the Microsoft 365 Admin Center. For step-by-step guidance, please refer to: Get support - Microsoft 365 admin | Microsoft Learn
This will allow the information to be properly processed and shared with the appropriate team for further investigation.
Additionally, I came across a report from another user indicating that this issue was not observed in version 16.112 on the Beta Channel.
With that in mind, you may consider waiting for version 16.112 to be released to the Current Channel. Alternatively, if appropriate for your environment, you could switch to the Beta Channel and update Outlook to that version to see whether the behavior is improved.
In the meantime, you may consider using the workaround that has been shared by other users, which is reverting to an earlier version, such as 16.109.2.
This can be done by removing the current Outlook version by going to Finder > Microsoft Outlook > Right-click > Move to Trash and installing version 16.109.2 using the updater.pkg available from the Update history for Office for Mac - Office release notes | Microsoft Learn
After that, you may turn off automatic updates for Legacy Outlook for Mac by going to Help > Check for Updates > unchecking Automatically keep Microsoft apps up to date.
I understand this may not be the answer you were hoping for, but I hope this provides some additional direction.
