Based on my research and testing so far, I have not found any official Microsoft supported method to completely disable Microsoft Teams updates.
Microsoft states the following:

That said, it appears that Teams automatic updates cannot be fully disabled due to Microsoft's update policy.
Even if you use the DisableAutoUpdate registry key to prevent automatic updates, the Teams client may still be blocked from functioning normally if the version becomes more than three months behind the latest available release, as described in the documentation above.
