Using Planner (Premium) to track/balance use of resources in tasks

I'm giving it a try to Planner to track tasks/resources of my team.

I was going after something as simple as identifying if I'm overloading some of my resources. It appears that planer considers 9h per day of work by default, and I'd like to be able to adjust that to 8h per day (40h a week).
I've tried Copilot to assist me. It was trying to redirect me to Project on the Web, which apparently has been phased out. It was also Copilot who recommended Planner to me for such simple necessity.

Does anyone out there how to adjust those 'more advanced' settings within Planner? Thanks!
