Based on your sharing, may I confirm whether you were trying to sign in your account via Add Accounts > Microsoft Exchange > enter the full email address and then you selected Configure Manually? When signing in to your Exchange account, the Configure Manually is used for manual/basic-auth style setup and this option requires information and detailed guidance from your Exchange Server administrator.
For this situation, can you verify which type your Exchange account is? Is it an Exchange Online/Microsoft 365 account or it is an account belongs to an on-premises Exchange server?

- On your iPad, go to Settings > Apps > Mail > Mail Accounts
- If you see your account is partially added, delete it first. Then select Add Account > Microsoft Exchange

- Complete the Microsoft sign-in page (including MFA if prompted) then Accept and Save

In this case, you need to contact your Exchange Server administrator and get direct assistance from him/her to sign into your account. You need to have the exact server details like:
- The correct external Exchange / ActiveSync server name (not an internal server name).
- Confirm if the username should be the full email address or another format your company uses.
- A domain field is required for your environment.
- Confirm if your mailbox is allowed to connect with the iPad Mail app.
