If so, based on what I’ve found, the shortcut color categories feature is currently only available in the Classic Outlook desktop app. Unfortunately, this feature is not supported in the New Outlook version or Outlook on the web.

If you're using Classic Outlook, you can set up shortcut keys for color categories by following these steps:
- Go to the Home tab
- Click on Categorize
- Select Set Quick Click
- Choose your preferred color category
- Assign a shortcut key
For the New Outlook, while the shortcut color categories aren’t available in the same way, you can use Quick Steps as a workaround. Quick Steps allow you to create shortcuts for actions like “Categorize Message”
with either a specific color or "AlwaysAskForCatergory"
. You can also assign a shortcut key in the optional section of the Quick Step setup.
