fighting the same problem - the closest to a solution I found for now was creating a PowerAutomate script which saves attachments to a OneDrive location and creates a new OneNote page corresponding to the Mail. But you won't be getting the attachment into OneNote that way. Certainly an annoying overlook on Microsoft's part to remove this feature without providing an viable, automation-friendly path forward for its users...

    Dear Steven,

Good day. Thank you for posting in Microsoft Community.

Based on your description, my understanding is that you want to use email to send notes to OneNote. In this case, we recommend you could start OneNote by doing one of the following:

    1. Open any email app that uses the same email address that you've configured for use with OneNote.
      • Create a new, blank message and then type out any notes that you want to send to OneNote.
      • Open any email message that contains information that you want to send to OneNote, and then click or tap Forward.
    2. In the To: field of the email, type ******@onenote.com.
    3. In the Subject: field, type a brief description of the note you're sending. This text will become the page title in OneNote. **Tip:**All notes that you send to the ******@onenote.com email address will be sent to the notebook and section that you've specified in your settings. You can easily override this preference for any particular message by typing the "@" symbol at the end of the email's Subject line, followed by the section name where you want the note to be saved. For example, typing Itinerary @Trip Details into your email's Subject field would create a new page called Itinerary in the Trip Details section of your default notebook.
    4. Click Send.
