The message "your org doesn't allow screen capture or recording" indicates that your organization's IT policies are preventing screenshots in the Outlook app.
To enable screenshots on personal Android BYOD devices, you can set 'Screen capture and Google Assistant' in App Protection policy to Allow. For more info, see: https://learn.microsoft.com/en-us/intune/intune-service/apps/app-protection-policy-settings-android
For iOS, screenshot blocking is a recent feature (since Intune SDK 20.2.1).
